This is the first time I make these, I didn't have chocolate chips for the recipe so I just adapted my moist chocolate chip cookie recipe to be a vanilla, coconut cookie :) I guarantee these are irresistable - very dangerous.
You will need: 1/2 cup brown sugar and 1/2 cup reg. sugar (I just used all natural cane sugar)
And cream it with 2/3 cup of margarine (I use olive oil margarine because its vegan)
Keep mixing until its fluffy, I don't have a hand mixer so I used this, but you can use a hand mixer, less stress on your elbow ;)
Once this is one add 1/4 cup vanilla soy yogurt or silken tofu. I really love the yoso brand.
And 1 teaspoon of vanilla extract, mix well.
On the side, in a medium bowl swift 1 1/2 cups whole wheat flour with 1/2 teaspoon baking soda and 1/2 teaspoon of salt.
Next, add flour mix to sugar mix in 2 doses until well blended
Next add about 1 1/2 cups of shredded coconut. I just used the rest of my pack, which was almost 2 cups.
