Another breakfast recipe

Oatmeal-Date Bread
Makes two loafs

2 cups Whole Wheat Flour
1 cup Rolled Oats 
1/2 cup to 1 cup Brown Sugar 
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 teaspoon Cinnamon
1 container (1/2 cup) Soy Yogurt
1 cup Soy Milk
3 teaspoons Ener-G Egg Replacer mixed with:
4 tablespoons water
(OR if you are not Vegan, 2 eggs)
1/4 cup melted coconut, olive or olive oil margarine
2 cups Dried Dates
2 tablespoons Water

1-Preheat oven at 350 degrees F
2- Mix all dry ingredients in a medium sized bowl.
3- In a large bowl, mix wet ingredients
MEANWHILE, cook dates in a sauce pan with 2 tablespoons of water, stirring occasionally
4-When the Date mixture turns into a somewhat consistant paste (you can leave some pieces less mushy) Add them to the wet mixture
5- With a large spoon add dry ingredients to wet ones in 3 different steps until all is mixed
6-Grease two narrow loaf pans with coconut oil, olive oil or margarine and add mix
7-Cook for 50 minutes or until a toothpick comes out clean.

* If you would prefer muffins reduce time by half.

This recipe can also be banana bread, just replace dates by two medium sized bananas and forget about the saucepan and water.
